Chilli Meatloaf
Inspired by Mexican flavours, we've added mild chilli spices and a sweet, tangy glaze to this family-sized meatloaf recipe. Our mixture goes a long way as it's packed with tasty veggies and beans, making it budget friendly as well as low in calories. Better yet, every slice stays moist and delicious (even after it has been frozen!), so it’s a super easy batch-cook option.

A probe thermometer is a great way to ensure this meatloaf is thoroughly cooked without having to cut into it. You need to achieve a temperature of 75ºC in the middle of the meatloaf. If you don't have a loaf tin, firmly press the mix into a loaf shape with your hands, place on a baking tray, and cook as instructed above.
