We have been asked by Tefal to create some recipes using their Actifry, and this is one of them!
It’s such a versatile kitchen gadget, and we love making the Garlic Mushroom Risotto as it makes it such an easy recipe to follow. No stirring, no messing, the Actifry does all the hard work for you!
As fab as Risotto is, having to keep stirring it is no good when you’re in a rush, or have the kids to keep an eye on!
What diets is this Garlic Mushroom Risotto suitable for?
This Garlic Mushroom Risotto is suitable for anyone following dairy free, vegetarian or vegan diets as long as you omit the following;
- Pecorino cheese
It can be made gluten free as long as you swap out the following ingredients for gluten free versions;
- Stock cubes

How many calories are in this Garlic Mushroom Risotto?
This Garlic Mushroom Risotto has 501 calories per portion. This means it falls into our Special Occasion category.

To cut down the amount of calories even more, you can simply halve the portion size and serve with a healthy accompaniment!
As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day.

Step 1
Add the onions, 200g of the sliced mushrooms and the garlic to the Actifry Pan. Spray with low calorie cooking spray and add the Hendersons relish. Cook for 5 minutes.
Step 2
Add the rice and cook for another 3 minutes.
Step 3
Add the stock, white wine vinegar and remaining 100g of mushrooms.
Step 4
Cook for 45 minutes.
Step 5
Add the peas, lemon juice, pecorino, chopped parsley and black pepper. Cook for another 3 minutes.
What could I serve with this Garlic Mushroom Risotto?
How do you know when this Garlic Mushroom Risotto is cooked?
After using the Actifry, the rice should be cooked throughout.
Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.
How long can you keep this Garlic Mushroom Risotto in the fridge?
As we all know you can get food poisoning from eating reheated rice, but, it’s not actually the reheating that can cause issues, it is, in fact, the way that the rice has been stored beforehand where the problem begins.
Rice can contain spores that are resistant to heat and can survive the cooking process.
If cooked rice is left standing at room temperature these spores can grow into bacteria. At this point, the bacteria can be destroyed by reheating the rice thoroughly.
You should remember to do the following if you’re going to keep leftover rice:
- Cool the rice as quickly as possible (ideally within one hour) then put it in the fridge immediately. You can split larger portions up into smaller batches to cool quicker.
- Reheat and use any leftover rice (stored in the fridge) within one day.
- When you reheat any rice, always check it is steaming hot all the way through.
- Don’t reheat cooked rice more than once.
Can I freeze this Garlic Mushroom Risotto?
As when keeping rice in the fridge, make sure to do the following if you plan to freeze it:
- Cool the rice as quickly as possible (ideally within one hour) then freeze it immediately. You can split larger portions up into smaller batches to cool quicker.
- Freeze as soon as the rice is cold.
- When you reheat any rice, always check it is steaming hot all the way through.
- Don’t reheat cooked rice more than once.
How do I reheat this Garlic Mushroom Risotto?
From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.
From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes then stir. Cook for a further 5-7 minutes until piping hot.

I have never successfully managed to make risotto but am attempting this tonight. It says 2 stock cubes to 1.4l – my stock cubes each make 190ml. Do i do more stock cubes to make up the 1.4l or less stock ? I am doing it on the hob for 2 people if that makes a difference.

Yummy! I missed out the vinegar by accident but it doesn’t seem to have spoilt the dish, it’s delicious! I needed a bit more liquid than stated but it came out brilliant. Thanks for a lovely recipe 🙂 xx

Does this definitely only serve 2? I’ve just made it and it made 3 very generous portions, could easily serve 4 as 75g is the recommended individual portion of rice?

Made this the other evening and loved it. So easy to make in the Actifry. After I dished up I added some roasted chicken breast on the top. Was enough for my hubby and I and a portion for the freezer. Would definitely recommend.
