The Instant Pot is basically a super slow cooker with a whole heap of other functions. It’s the safest pressure cooker out there – and you can have pulled pork cooked in just an hour! Yes, an hour! Set the slow cooker to high and cook for 4 hours, or until the ham is tender and the potatoes soft.

Step 5

When everything is cooked, if you want the soup a bit thicker, roughly mash up some of the potato with a potato masher. Just enough to thicken the soup slightly, then cook for another 30 minutes or so.

Can you cook this Ham, Leek and Potato Soup another way?

We used the slow cooker function on the Instant Pot for this recipe, but you could also use the pressure cooker function or just a pan on the stove.

The pressure cooker should only take around 30 minutes cooking time, whilst the slow cooker will take around 4 hours (on a medium to high setting). If you’d like to cook it in a pan on the stove then this will take around an hour.

How do you know when Ham, Leek and Potato Soup is cooked?

This Ham, Leek and Potato Soup takes 4 hours in a slow cooker, 30 minutes in the Instant Pot and 1 hour on the stove.

You’ll know that your Ham, Leek and Potato Soup is cooked when the ham is tender and the potatoes are soft.

If you’d like a thicker soup, then once the potatoes are soft simply roughly mash them up and then cook for another 30 minutes or so.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

How long can you keep Ham, Leek and Potato Soup in the fridge?

Once you’ve put it out, ideally you should eat it within 4 hours.

If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Ham, Leek and Potato Soup in the fridge for approximately 2 days or so.

Can I freeze Ham, Leek and Potato Soup?

Yes you can! This recipe can be frozen, but please remember to do the following;

  • Freeze it as soon as it is cold enough.
  • Use a container or bag that is suitable for freezing.

Don’t forget to add a label with what it is, and on what date you put it in the freezer!

How do I reheat Ham, Leek and Potato Soup?

From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.

From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes then stir. Cook for a further 5-7 minutes until piping hot.

Ingredients

  • 2 leeks cut into chunks
  • 400 g gammon joint cut into chunks, all visible fat removed
  • 800 g potatoes cut into chunks
  • 1500 mls chicken stock or veg stock (using 2 stock cubes for 1.5 ltr)
  • low calorie cooking spray

Instructions

Made this today in my slow cooker was amazing, really easy and perfect for a cold wet day like today.
the only thing was the gammon had no flavour whatsoever, would it be an idea to cook it first to seal in the flavour? Anyone have any tips on how to keep that yummy flavour?

    Hi Gillian, it could be the particular brand of gammon joint you used to make this recipe, you could lightly fry the gammon chunks with the leeks if you wanted to before you add the stock. Hope that helps!

    Hey Claire, it’s down to personal preference when it comes to soaking the gammon joint. The only other salt is coming from the stock cubes as we don’t add additional seasoning to this soup so it should be fine without soaking but like I said it’s up to you!

This soup looks amazing and I want to cook it, only my pressure cooker isn’t an instant pot and doesn’t have a slow cooker mode. Would you recommend that I just cook it in my slow cooker or could this still be made in the pressure cooker, on the soup setting or meat setting and if so how many min on which setting please?

I made this today in my slow cooker for 12 hours on low but the potatoes werent cooked well. I used jacket potatoes.
Unsmoked gammon joint isn’t too salty.
All in all a lovely soup.
