Hunters Chicken is a classic pub grub order, and we wanted to combine all of those cheesy, saucy barbecue flavours with the comfort of a warming pasta dish – so our Hunters Chicken Pasta Bake recipe was born!

It’s the ultimate comfort food because it feels super indulgent, when it isn’t. Thanks to some smart low calorie swaps and alternatives, you can enjoy a serving of this dish for just 284 calories per plate. Yep, really! We’ve bulked our recipe out with lots of tasty veggies and reduced fat cheese, to keep things way lighter than the pub alternative.

The seriously cheesy topping is the real winner. When it’s golden and bubbly and the edges look nice and crisp, your bake is yummy and ready to serve. No fighting over seconds allowed…

Add the pasta to a pan of boiling water and cook according to the pack instructions. Drain when cooked and leave to one side.

While the pasta is cooking, spray a large frying pan with low calorie cooking spray and set on a medium heat. Cook the onions for 4 minutes until softened, add the pepper and garlic and continue to fry for 2 minutes.

Add the diced chicken and bacon and brown on all sides. Add the chopped tomatoes, BBQ seasoning, garlic granules, onion granules, chilli powder, mustard powder, balsamic vinegar, Henderson’s relish, tomato puree and sweetener. Give the pan a good stir and crumble in the stock cube.

Allow the pan to bubble for 5 minutes until thickened.

Step 6

Add the drained pasta and stir to coat in the sauce. Tip into an ovenproof dish and sprinkle on the cheese. Pop into the oven for 8 minutes until the cheese is bubbly and golden.

Ingredients

  • 350 g diced chicken breast
  • 4 bacon medallions cut into strips
  • 200 g pasta we used fusilli but any pasta shape will work great
  • 1 medium red onion peeled and diced
  • 1 medium red pepper deseeded and diced
  • 2 garlic cloves peeled and crushed
  • 1 tbsp Henderson's relish or Worcestershire sauce
  • 1 tbsp balsamic vinegar
  • 1 tbsp tomato puree
  • 2 tsp BBQ seasoning
  • 2 tsp white granulated sweetener
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¼ tsp mustard powder
  • ¼ tsp chilli powder
  • 400 g can chopped tomatoes
  • 1 chicken stock cube
  • 40 g reduced fat Cheddar cheese finely grated

To work out your own weight of a serving you would need to make the finished dish and divide servings, as the weight will vary due to variation of ingredients and water content it’s not something we can do as an exact measure. If you scroll down to the recipe card at the bottom of the page on the website there is a little arrow by servings and you can alter up or down to serve more or less people. Hope that helps!

Made this Friday and oh my it was good! Left out the chilli as my family don’t like spice. I followed the recipe but it only fed 4 did I do something wrong or have to big of a portion? It says feeds 6

    Hey Lisa, I think you’ve possibly served a larger portion than we have suggested. If you think the portions for 6 are a little small you can serve with an accompaniment of your choice, hope that helps!

    Hi Kate, you can make this ahead then add the cheese and reheat.You need to bear in mind that the dish will have completely cooled down so it will take longer than 8 minutes in the oven and will need to piping hot throughout. Hope you enjoy the recipe!

    Hey Kelly, yes this recipe is okay to freeze! To re-heat place in a microwave proof container with loosely fitting lid and heat for 3-5 minutes until piping hot. Hope that helps!
