Minted Lamb Hotpot
Using lean cuts of lamb and adding plenty of root vegetables keeps this fuss-free hotpot recipe surprisingly low in calories. The addition of a couple of spoonfuls of mint sauce elevates a simple one-pot dish to a delicious new level.

We have tried this tasty dish with lamb and also with left over cooked lamb from the Sunday joint and both work fabulously !
Absolutely fabulous!
I pressure cooked in my Ninja after adding all ingredients for 10 minutes then 10 minutes natural release then grilled the potatoes on 240c for 10 minutes Left out the lamb- hubby doesn't like it but he asked 4 more
Have also tried it with beef - delicious, and have added tinned carrots near the end because I didn't have fresh! Hubby (doesn't like slimming food) asked for seconds every time!! What a success. Your recipes are helping to save his life. Send us a Hint or Tip

Can the minted lamb hotpot be cooked in a slow cooker? If yes can I have the method?
I have the comfort food book but it doesn’t say you can slow cook.
