You’ll absolutely love waking up to smell the coffee in these scrumptious Raspberry Mocha Granola Pots. We know breakfast can feel a little repetitive at times, but with these nifty pots on your morning menu, you’ll be counting down the seconds until morning!

Granola can be sneakily high in calories, so to make sure things stay nice and light, we’ve baked oats into a coffee flavoured granola-style mixture instead. The results are gorgeously crunchy and it only takes 10 minutes in the oven!

Infused with espresso, cocoa powder and sticky-sweet maple syrup (doubled-up with a squeeze of Sweet Freedom Choc!), these oats are worth the effort of digging right to the bottom of the pot. That’s all before you’ve added a layer of chocolatey yoghurt, juicy raspberries, reduced-fat aerosol cream and an extra drizzle of Choc Shot on top…

Once the granola is cool, you are ready to assemble. Add a little of the granola to the bottom of your serving glasses, then top with a little of the yoghurt and add a few of the raspberries. Continue to layer up the granola, raspberries and yoghurt in any combination you like.

Add a swirl of aerosol cream and drizzle with a little of the low-calorie chocolate syrup. Serve!

Ingredients

For the granola

  • 40 g rolled oats
  • 2 tbsp maple syrup
  • 1 tbsp low-calorie chocolate syrup
  • ¼ tsp cocoa powder
  • ¼ tsp espresso powder

For the yoghurt

  • 200 g fat-free Greek yoghurt
  • 2 tsp cocoa powder
  • 1 tsp espresso powder
  • 2 tsp maple syrup
  • 14 raspberries
  • 1 tsp low-calorie chocolate syrup (we used Sweet Freedom Choc Shot!)
  • reduced-fat aerosol cream to serve

What can I use instead of espresso powder? I’m not buying a jar that I will never finish for 1.5 teaspoons!!. Could I use ordinary coffee?

    Hi Valerie, there’s a tip under this recipe for the espresso powder. If you don’t have espresso powder, you can use instant coffee granules. Add them to a food bag and bash with a rolling pin until you have a fine powder. Hope that helps!
