Sloppy Joes are a tasty, filling meat dish, typically served in a bun. Swapping the bun for some bell peppers and opting for lean mince makes this a much healthier version, but one that maintains the all-important delicious flavours of the original dish.

Super easy, and tasty - one you can prep in advance
I prepped in advance so the mince could absorb the flavours, I also added some rice grains and extra water - I didn’t have redwine vinegar so went with cider vinegar and a red wine stock pot Really lovely, something super different to do with mince
Really tasty
I added a bit of paprika and chilli flakes to spice it up!
Very tasty and filling recipe.
We used large tomatoes instead of peppers. The tomatoes don't take long to cook through so we cooked the filling ingredients a little before stuffing the tomatoes. We served it with jacket potatoes ( microwaved first then finished in the oven) Tasty.
