There are a few Slow Cooked Hunters Chicken recipes out there, but we thought we’d use our own BBQ sauce recipe to make our version and cook it in the Instant Pot, our extra special slow cooker. The Instant Pot is ideal if you want to throw the Slow Cooked Hunters Chicken recipe together in the morning (or the night before) and have it ready for dinner.
If you haven’t tried cooking chicken in the slow cooker you really should, you won’t believe how moist and tender it is!
This Slow Cooked Hunters Chicken calls for BBQ seasoning, we like to use Schwartz Perfect Shake BBQ Classic Seasoning. However, if you don’t have this you can use any BBQ seasoning. Just remember to check the nutritional values of whichever seasoning you use as you would be amazed at how many Points and calories are in some seasonings and rubs, due to the high sugar content!

Franks Buffalo Wings Hot Sauce – Available at most supermarkets
Schwartz Perfect Shake BBQ Classic Seasoning. However, if you don’t have this you can use any BBQ seasoning.
We use Sukrin 1 which is an all-natural granulated stevia sweetener alternative to sugar with zero calories. You can grab Sukrin 1 over on Amazon UK.
That being said you don’t have to use Sukrin – there are lots of other high quality granulated sweeteners available from the supermarket, such as Canderel Sugarly, and Natvia.

How many calories are in this Slow Cooked Hunters Chicken recipe?

To make the BBQ sauce
Step 1
Spray a frying pan with low calorie cooking spray and cook the onions and garlic until the onions are soft.
Step 2
Add the tomato puree and tinned tomatoes and cook for 5 minutes on high, stirring frequently.
Step 3
Add in the rest of the ingredients, lower the heat and simmer for 20 minutes, the sauce should thicken nicely.
Step 4
You can make this in advance, just put it in an airtight container and store in the fridge until ready to use.
To make the Hunters Chicken
Step 1
Wrap each chicken breast in a bacon medallion and secure it underneath with a cocktail stick.
Step 2
Place the wrapped chicken in the slow cooker.
Step 3
Pour the BBQ sauce over the chicken, stir gently to make sure it is coated.
Step 4
Turn on the slow cooker and cook for 3 hours on High/Medium OR 6 hours on Low.
Step 5
When the chicken is cooked, remove them from the slow cooker and place them in an oven proof dish.
Step 6
Check the consistency of the sauce. If it needs thickening slightly turn up the heat on the slow cooker and allow it to simmer, with the lid off for a couple of minutes.
Step 7
Pour the sauce over the chicken and sprinkle each one with 20g/¼ cup of grated cheese, then place under a pre heated grill until the cheese starts to brown.
Step 8
Serve with anything you want, salad, rice, baked potatoes and veg.

How do you know when this Slow Cooked Hunters Chicken is cooked?
The chicken should be cooked until any juices run clear and the meat is firm and white – this will take 3 hours in a slow cooker on a medium/high setting and 6 hours in a slow cooker on low.
How long can you keep this Slow Cooked Hunters Chicken in the fridge?
Once you’ve put it out, ideally you should eat it within 4 hours.
If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Slow Cooked Hunters Chicken in the fridge for approximately 3 days or so.

How do I reheat this Slow Cooked Hunters Chicken recipe?
From chilled: Place in a microwave proof container with a loosely fitting lid and heat for 4-7 minutes until piping hot.
From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes then stir. Cook for a further 5-7 minutes until piping hot.

Hi, if im freezing this do i cook it all then freeze or freeze uncooked chicken in the sauce? Im thinking cook the chicken in the sauce then freeze before adding the cheese?

Fab recipe, the only thing i have changed is to cook the chicken and bacon separately (so you can get crispy bacon). Then stack onto the oven cooked chicken, then the sauce with your cheese allocation on top then back in the oven to melt.
To be honest i cant tell the difference from a pre-made dish apart from being much better and more washing up!

This looks fab and I can’t wait to try more SW friendly slow cooker recipes especially towards and across Winter. However, could I ask / suggest more info re Sukrin is given in terms of the right flavour to buy. I’ve checked Amazon (UK / .co.uk. version) and it doesn’t have ‘Sukrin 1’ it appears to go in flavour (I.e. Peanut, almond or coconut) alternatively a ‘gold’ and special baking versions. I really want to make sure I get the recipe and therefore flavour right! Thank you! 🙂
