Our Slow Cooker Sausage Casserole is so easy to make! Just throw all of the ingredients into your slow cooker in the morning and dinner will be ready and waiting for you when you get home.

This hearty casserole is packed full of flavour and is a great way to warm up when the weather starts getting colder. It’s packed full with loads of yummy vegetables, but that doesn’t mean that you can’t serve it alongside even more!

I made ours in the oven and cooked for 3 hours. This made a huge portion, we easily had enough for another family meal. I froze in portion sized containers for a quick and easy lunch.

Instead of the slow cooker I used the fan oven, 160c for around 90 mins in cast-iron casserole pot, then added the stockpot and butter beans for a further 20 minutes to warm through.

I changed the recipe to make 3 portions so 1.5 each, I used plant based sausages as I’m having a vegetarian week with p.o.n. It was 632 calories but you felt stuffed. Pinch of nom recipes are so easy t follow

How do you know when this Slow Cooker Sausage Casserole is cooked?

Ingredients

  • 600 grams chicken sausages
  • 2 onions diced
  • 2 peppers any colour - diced
  • 5 medium carrots peeled and sliced into thick chunks
  • 600 grams small potatoes peeled and cut into big chunks
  • 2 400g tins chopped tomatoes
  • 3 tbsp tomato puree
  • 250 ml chicken stock made up with 1 stock cube
  • 2 cloves garlic crushed
  • ½ tsp dried oregano
  • 1 tsp dried thyme
  • 1 handful fresh parsley chopped
  • 1 400g tin butter beans drained
  • 1 beef stock pot
  • 1 tbsp Worcestershire sauce
  • 1 bay leaf

    Hi Julie,
    We have tried this recipe with vegan Quorn sausages, and that worked really well, but I’m not sure how readily available they are now. You would be best to use a vegan sausage that is firm in texture so it will hold up to the long cooking time. Hope this helps.

    That would probably depend on the type of veggie sausage you use. Go for a firmer type, like Quorn and they should be fine!

    Hi ALG, yes, a beef stock pot is different to a beef stock cube. This recipe needs 1 chicken stock cube and 1 beef stock pot. Stock pots come in gel form and are gluten free. They can be dissolved in boiling water or just added directly and would melt into the dish.

    Hi Sarah, there is an oven method provided on the web page. We recommend 2-3 hours cooking at 170ºC. Make sure you have it tightly covered and check it every 30 minutes or so. Hope this helps!
