With Squash Pizza Slices, you can have deliciously cheesy, slimming friendly pizza slices with a surprise ingredient: butternut squash!

Shaped into triangles and smothered in a garlicky tomato sauce, butternut squash makes the ideal pizza base instead of dough; it’s low in calories and Points, and as long as you cut it into the right thickness it maintains the shape perfectly.

Packed full of nutrients, this recipe is a great way of getting extra veggies into your family’s diet, and Squash Pizza Slices are really fun to eat too! You can easily adapt them to suit different diets too, like swapping the cheese for a vegan version to make them dairy free.

Place the squash slices on the greased baking tray in the shape of a pizza.

Spray the squash slices with low calorie cooking spray.

Step 6

Place in the oven for 15 – 20 minutes, or until mostly tender. Some areas may be a little firmer than others at this point. Remove from the oven.

Step 7

Place the tomato puree, garlic granules and salt and pepper in a small bowl. Mix well.

Spread the tomato puree mixture over the squash triangles.

Sprinkle with Cheddar cheese, then place a slice of mozzarella on top of each triangle.

Place one cherry tomato slice on top of each triangle and sprinkle with oregano.

How do you know when Squash Pizza Slices are cooked?

Ingredients

  • 1 medium butternut squash peeled and cut into 6 x 1cm thick slices
  • 30 g reduced fat Cheddar cheese grated
  • 40 g mozzarella cheese sliced into 6 slices
  • 2 cherry tomatoes each cut into 3 slices
  • 2 tbsp tomato puree
  • ¼ tsp garlic granules
  • ¼ tsp dried oregano
  • 5 g fresh basil chopped
  • salt and pepper to taste

Tip: Make sure that you cut the squash into triangles that are 1 cm thick. If they are too thin, the pizza slices will become over cooked and too soft. If the triangles are too thick, they will be under cooked and too firm.

This is so amazing. When I order dominoes I always add ketchup but this didn’t need it. It’s moist honeyyy. Also, it’s actually got that pizza taste to it without the guilt afterwards. SOLLLDD!
