These slimming friendly Mini Potato Bites are super simple to make and taste amazing – they’re perfect if you’re counting calories or following a plan like Weight Watchers.
These Mini Potato Bites honestly couldn’t be easier. In fact, the most difficult thing is deciding what delicious filling to have with them!
We’ve chosen a quark and chive filling, but you could fill them with everything from egg mayo and pulled pork to tuna and smoked salmon – just remember to account for additional Points or calories!
Even though these Mini Potato Bites are slimming friendly, they look so impressive that no one would ever guess! Serve with a garnish of chives or spring onions for that extra ‘wow’ factor.

Wash and dry the potatoes, then place them on a baking tray.
Bake at 190°C for about 40 minutes, or until the potatoes are soft but crispy on the outside.
While the potatoes are cooking, mix the quark and chopped chives and spring onions together. Add some sea salt and black pepper.
Allow the potatoes to cool for a few minutes, then cut a cross in the top of each potato. Gently squeeze each potato to open top slightly. Sprinkle with a little salt if you want.
Top each potato with a teaspoon of the quark mixture, then garnish with some chopped chives or spring onion and serve.

How do you know when these Mini Potato Bites are cooked?
Cook your Mini Potato Bites for about 40 minutes or until the potatoes are soft, but crispy on the outside.
Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.
How long can you keep Mini Potato Bites in the fridge?
Once you’ve put it out, ideally you should eat it within 4 hours.
If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Mini Potato Bites in the fridge for approximately 3 days or so.
Can I freeze Mini Potato Bites?
No, we don’t recommend freezing this recipe.
