A fresh potato salad is a classic side dish for picnics, barbeques and summer lunches. Usually made with full fat mayonnaise, traditional potato salads can be high in calories – not ideal when you want a lighter option!
This Sweet Potato and Harissa Salad is a delicious alternative, using natural yoghurt with 0% fat instead of mayo for a slimming-friendly yet creamy side dish.
Harissa paste is a blend of chilli and spices that adds lots of flavour and a little kick to this recipe. Easy to find in your supermarket, the harissa mixes perfectly with the cool yoghurt to make a refreshing sauce with far fewer calories than traditional mayonnaise.
Pair this side dish with grilled or barbequed kebabs and a fresh green salad for the perfect summer lunch.

Preheat the oven to 180ºC.
Step 2
Spray a non-stick baking tray with low calorie cooking spray.

Cut the sweet potatoes into 2 cm evenly sized cubes and place on the baking tray.
Step 4
Spray the sweet potato cubes with low calorie cooking spray and place in the oven for 25 minutes. After 25 minutes, turn the sweet potato cubes over and spray with low calorie cooking spray again. Return to the oven for a further 25 minutes until tender when pierced with a knife and just beginning to brown at the edges.
Step 5
Remove from the oven and leave to cool.
Step 6
Place the yoghurt and harissa paste in a medium mixing bowl and mix well.
Step 7
When the sweet potatoes have cooled, add them to the bowl with the spring onion and season well with salt and pepper. Stir until the sweet potatoes are all coated and serve.

Instructions
