What could I serve with this Garlic Mushroom Risotto?
How do you know when this Garlic Mushroom Risotto is cooked?
After using the Actifry, the rice should be cooked throughout.
Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.
How long can you keep this Garlic Mushroom Risotto in the fridge?
As we all know you can get food poisoning from eating reheated rice, but, it’s not actually the reheating that can cause issues, it is, in fact, the way that the rice has been stored beforehand where the problem begins.
Rice can contain spores that are resistant to heat and can survive the cooking process.
If cooked rice is left standing at room temperature these spores can grow into bacteria. At this point, the bacteria can be destroyed by reheating the rice thoroughly.
You should remember to do the following if you’re going to keep leftover rice:
- Cool the rice as quickly as possible (ideally within one hour) then put it in the fridge immediately. You can split larger portions up into smaller batches to cool quicker.
- Reheat and use any leftover rice (stored in the fridge) within one day.
- When you reheat any rice, always check it is steaming hot all the way through.
- Don’t reheat cooked rice more than once.
Can I freeze this Garlic Mushroom Risotto?
As when keeping rice in the fridge, make sure to do the following if you plan to freeze it:
- Cool the rice as quickly as possible (ideally within one hour) then freeze it immediately. You can split larger portions up into smaller batches to cool quicker.
- Freeze as soon as the rice is cold.
- When you reheat any rice, always check it is steaming hot all the way through.
- Don’t reheat cooked rice more than once.
How do I reheat this Garlic Mushroom Risotto?
From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.
From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes then stir. Cook for a further 5-7 minutes until piping hot.

What temperature should set the air fryer on? I have a two draw one, no paddle does it need stiring, how frequently?
LisaSunday 12th March 2023
Hi Tina. This recipe was developed specifically for the Tefal Actifry. We don’t think it would be suitable for air fryers without a paddle as it requires constant stirring.

I can’t get Pecorino cheese, so can I use parmesan instead. What is that calorific value of the Pecorino cheese please, so I can compare the two.
Many thanks,
Tina

Hi! To make this vegan, it says to omit the cheese. Should I add vegan cheese as a replacement or will it not work as well? Also will no cheese at all affect the dish?
HollyMonday 10th January 2022
Hey Hannah, you could use a vegan friendly cheese there are brands such as Violife which have suitable alternatives, add in step 5 as stated in the recipe. Hope that helps!

Is 501 calories correct for this? Seems a lot for what it is, the beef risotto is only listed as 300. Thanks
HollyThursday 1st October 2020
Hey Lewis, I have double checked the nutritional information for this recipe and it is correct on the recipe page. This recipe differs in potion size from the Bolognese Risotto and also includes 90g of Pecorino cheese you could omit this and alter the calories accordingly if you’d like. Here is a link to our guide on how we work our the nutritional information for all of our recipes https://pinchofnom.com/how-to-work-out-calories-and-points-in-a-recipe/

I don’t have a actifry can this recipe work by just using a pan with the stirring!!?
Steve CowderoyTuesday 12th May 2020
Hi Tish, you can make this dish without using a Actifry. Add stock gradually until rice is cooked and all liquid has been absorbed. Hope this helps.

Is an original actifry okay for this recipe?
Holly LevellMonday 22nd June 2020
Hi Kelly, We created this recipe in the Tefal Actifry XL model. If you don’t have the XL version we advise reducing the quantity in the recipe card at the bottom of the page. Where there is a box with the number 3 for servings, change this to 2 or less and the ingredient quantities will reduce automatically. You don’t want to overfill and damage your machine! Hope that helps!

How would this be cooked in a pressure cooker?
HollyFriday 16th October 2020
Hi Kelly, We have recently published an article on slow cooker and instant pot conversions which you can find here if you scroll down there is a table that gives a rough guide for how to convert recipes. These times are just a rough guide only, so please make sure that everything is cooked through before serving. If not, just cook it for a bit longer. Hope that helps!
