Our Tomato, Basil and Mozzarella Salad is perfect for barbecues, picnics or even a light lunch and it really couldn’t be easier to make!
This has to be one of our favourite quick salads and although it might not look like anything special, it’s packed full of flavour and is a fantastic accompaniment to pretty much any Italian dish.
We’ve used mini mozzarella balls in this recipe, but you could easily cut a regular size mozzarella ball up into smaller pieces instead if you prefer! You’ll also need to some cherry tomatoes and it’s up to you which type you go for. We used a selection pack from Tesco, which included Yellow and Red Datterini Vine Tomatoes, amongst others!

Step 1
If you’re using a big ball of mozzarella, weigh out 50g and then cut it into even sized cubes.
Step 2
Next, make the pesto for the mozzarella. Place the handful of rocket, handful of basil, garlic clove, sea salt and freshly ground black pepper into a blender and blend until smooth.
Step 3
Mix the mozzarella balls (or diced mozzarella) with the pesto and set aside in the fridge while you prepare the salad.
Step 4
Cut the tomatoes in half and pick some small basil leaves off the stalks, then mix the 2 together.
Step 5
Arrange the halved tomatoes and basil leaves on top, add the pesto coated mozzarella balls and serve.

Instructions
- If you're using a big ball of mozzarella, weigh out 50g then cut it into even sized cubes.
- Next, make the pesto for the mozzarella. Place the handful of rocket, handful of basil, garlic clove, sea salt and freshly ground black pepper into a blender and blend until smooth.

- Place the rocket and watercress mixed leaves in a bowl or on a plate and spray with some balsamic vinegar.

Good morning to you.
This sounds delicious and perfect for the weather we are having, lunch is sorted today then!
My question is – do you know how long the Pesto would last made up in a fridge? Thinking this would be fab stuffed in a chicken breast or on top of a Salmon fillet.
