If you’re a fan of blue cheese you can’t go wrong with these Half Syn Whipped Blue Cheese Crostini. We’ve catered for a few events over the last few months, and they went down a treat!

We decided to use Danish Blue in this recipe as it has slightly lower syn value than other blue cheeses. However, if you prefer to use something like Stilton or Shropshire Blue you can, just adjust the syns accordingly. Danish Blue works out at 7 syns for 38g.
When you use a 4cm star shaped cutter then these work out at 0.5 syns. 24 stars of wholemeal bread 2mm thick is approx 50g – 5 syns (we’re working on the proviso that 60g of wholemeal bread = 6 syns)

The final essential ingredient is a decent rolling pin. You need to make sure the bread is an even thickness.
