This is an especially good recipe around Christmas time too, when you might have a lot of Turkey to use up, and want something healthier than a turkey sandwich! Shred the cooked turkey and sprinkle with the Chinese five spice. Spray a frying pan with low calorie cooking spray and cook on a high heat for around 5 minutes or until crisp.

Chop the cucumber into 4 pieces and then halve lengthways. Scoop out the seeds with a teaspoon. Slice the spring onions into slithers.
Step 3
Into the cucumber cups, place a drizzle of hoisin sauce, the crispy turkey and top with the spring onions. Serve warm or cold!
