We like to use Sukrin, which is an all-natural granulated stevia sweetener alternative to sugar with zero calories. It doesn’t have that strange after taste that a lot of artificial sweeteners do, which makes it perfect for cooking and baking.

Sukrin is in equal and weight to sugar, so if you're using a powdered sweetener you'll need to use less as it weighs less.

Sometimes, the best meals are those thrown together using the dregs of food you’ve got left in the kitchen three hours before you do the food shop. This is such a meal, that’s tasty, cheap and really easy to prepare. Slimming World friendly packed full of Speed foods, this salad can be served on it’s own, with Hasselback potatoes (as I have done) or anything! Whatever tickles your pickle.

INGREDIENTS

INSTRUCTIONS
  1. Finely dice the onion, celery, gherkins and tomato. Place into a big bowl of your choosing.
  2. Add the herbs, white wine vinegar and beans and mix.
  3. .....And that's about it! Eat with your favourite cutlery and enjoy it with whatever you choose to serve it with.
