How many calories are in this Buttery Carrot and Swede Mash?

Step 1
Peel the carrots and swede, then cut them into chunks.

Put the carrot and swede into a large saucepan of salted water. Bring the pan to the boil, then cover and simmer for about 30 minutes until soft.
Step 3
Drain in a colander. Return the veg to the pan, then add a few sprays of low calorie cooking spray and season to taste with some sea salt and freshly ground black pepper.
Step 4
Mash (using a vegetable masher) until the carrot and swede reaches the consistency you prefer (we like it quite smooth).
Step 5
Check the seasoning again, adjust if necessary and serve.

How do you know when this Buttery Carrot and Swede Mash is cooked?
You’ll need to cook your carrots and swede for around 30 minutes or until soft.
Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.
How long can you keep this Buttery Carrot and Swede Mash in the fridge?
Once you’ve put it out, ideally you should eat it within 4 hours.
If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Buttery Carrot and Swede Mash in the fridge for approximately 3 days or so.

Yes you can! This recipe can be frozen, but please remember to do the following;
