These slimming friendly Mini Potato Bites are super simple to make and taste amazing – they’re perfect if you’re counting calories or following a plan like Weight Watchers.
These Mini Potato Bites honestly couldn’t be easier. In fact, the most difficult thing is deciding what delicious filling to have with them!
We’ve chosen a quark and chive filling, but you could fill them with everything from egg mayo and pulled pork to tuna and smoked salmon – just remember to account for additional Points or calories!
Even though these Mini Potato Bites are slimming friendly, they look so impressive that no one would ever guess! Serve with a garnish of chives or spring onions for that extra ‘wow’ factor.

Wash and dry the potatoes, then place them on a baking tray.

Bake at 190°C for about 40 minutes, or until the potatoes are soft but crispy on the outside.

While the potatoes are cooking, mix the quark and chopped chives and spring onions together. Add some sea salt and black pepper.
Step 4
Allow the potatoes to cool for a few minutes, then cut a cross in the top of each potato. Gently squeeze each potato to open top slightly. Sprinkle with a little salt if you want.
Step 5
Top each potato with a teaspoon of the quark mixture, then garnish with some chopped chives or spring onion and serve.
