This Syn Free Nando’s Peri Peri Chicken is really simple to make – you’ll need a good baking dish like this one from Amazon.

Next, if you want to keep this Syn free, you need something called Xanthan Gum. Xanthan Gum is a syn free thickener and works a bit like cornflour. You add it to a liquid, and it thickens but you only need to add a little! Just 1/4 or a teaspoon works the same as 1 tbsp cornflour!

You can grab Xanthan Gum in the free from aisle of any supermarket (it’s gluten free!), or you can grab it from Amazon.

Can I freeze this Syn Free Nando’s Peri Peri Chicken?

This recipe can be frozen, but please remember to do the following;
– Freeze it as soon as it is cold enough
– Use a container or bag that is suitable for freezing.
– Defrost thoroughly before reheating.

Make sure it’s piping hot before serving!

How do I make this Syn Free Nando’s Peri Peri Chicken ?

Step 1

Preheat the oven to 180°C. Remove any fat or skin from the chicken and place in a baking dish.

Step 2

Chop the onions and peppers into large chunks and place in the baking dish. Spray with Frylight.

Step 3

Sprinkle over all the spices, Xanthan Gum and tomato puree all over the chicken and vegetables, and add the juice of the lemon. Mix to combine fully.

Step 4

Place in the oven and cook for 40 minutes until the chicken is browned and cooked through.

You may need to add a couple of tablespoons of water to the dish to make some extra sauce – it really depends on how much liquid comes out of the vegetables and chicken during the cooking process.

Step 5

Serve with rice and a wedge of lemon!

INSTRUCTIONS

    1. The xanthan gum thickens any liquid in the dish to create a sauce. If you don’d add it, the liquid will just be a little runnier. 🙂

      Xanthan gum is available from most large supermarkets.You will find it in the Free From aisle. You only need a tiny amount to thicken a dish, usually a 1/4 of a tsp will be enough.
