Step 1
Place three wide slices of smoked salmon onto a board. Put the rest of the smoked salmon into a food processor with the quark and blitz until pureed and smooth.
Step 2
Split the salmon mixture into three.
Step 3
Into one mix the zest of the lime and chilli flakes. Into the second mix the zest of the lemon and black pepper. Into the last mix the cucumber and dill.
Step 4
Place the flavoured salmon mixtures onto the middle of each of the saved slices of smoked salmon, and carefully roll.
Step 5
Cut each piece into 8. Garnish with a little lime or lemon zest, or sprig of dill depending on which flavour you are serving.
