This Syn Free Tomato Bruschetta is quick to prepare and incredibly tasty!
I love all things Italian and these are a really lovely, light lunch for a hot day. Alternatively, serve as a starter to some delicious pasta for a full on Italian feast!
I like to use the Schar brown ciabatta’s – you can have one for your healthy extra.
They are gluten free and absolutely amazing! You can find them in the Gluten Free aisle at most supermarkets.

It is important to let the tomatoes stand at room temperature in the dressing for around 20 minutes after preparing them.
This allows them to release their flavour and soak up all the tastes.
I like to use an extra virgin olive oil spray (2 calories per spray) once I’ve put the tomatoes onto the ciabatta.
You could use a couple of sprays so it’s no more than 0.5 syns, and is personal choice as to whether you want to do it or not.
I also like to use all different varieties of tomatoes. Yellow, green, red, plum, cherry, beef – it all adds to the vibrancy and gives loads of amazing flavour!

- Add all of the ingredients into a large bowl and mix, ensuring that the tomatoes are fully covered with the vinegar. Leave to rest for 20 minutes, unrefridgerated.
- Serve on crusty Schar ciabatta's, or as an accompaniment to steak or fish. Spray with a couple of sprays of extra virgin olive oil if to your taste.
