Chicken Vesuvio
An Italian/American dish with famous roots in Chicago, this Chicken Vesuvio has been given a Nom makeover to create a slimming-friendly, easy midweek meal. Succulent chicken thighs and golden roast potatoes soak up all the delicious flavours of the sauce, and this one-pot dish saves you time and effort as well as calories!

If you can't find white wine stock pots, reduce the water used to make up the stock to 400ml and add 100ml white wine instead. This will increase the calories to 401 kcal per serving.
If you don't have a casserole dish use a large frying pan for steps 2-3, then transfer to a 30cm (12in) ovenproof lasagne dish and continue to follow the instructions.
