Fish Finger Tachos
Our Fish Finger Tachos are a colourful flavour fiesta on a plate. We’ve swapped out beef mince for fish finger bites and layered them together with a medley of shredded slaw-style veggies. It wouldn’t be ‘Tachos’ without nachos, so we’ve added low-salt tortilla chips for an irresistible cheesy crunch.

There’s no shortage of flavour (or colour!) in our Fish Finger Tachos. Bursting with an easy-to-assemble, delicious filling, they’ll transform from a group of ingredients into a fully-loaded dinner in less than 25 minutes.
To make sure our Tachos are filling for fewer calories, we’ve combined shredded cabbage, red onion, lettuce and carrot with a sriracha-mayo drizzle to make our vibrant, slimming-friendly slaw. Plus, we’ve popped low-salt tortilla chips in the oven with a melty topping of reduced-fat Cheddar cheese to give our Tachos their signature nacho crunch.
Tachos are tasty and filling enough all on their own, or you can serve them up with a side of Coleslaw and Homemade Oven Chips for a more indulgent spread. They’re definitely one of our favourite ways to take a midweek break from meat!
There’s nothing to stop you ramping up the spice if you’re in the mood for fiery flavours; we love a drizzle of hot sauce over ours. Just be sure to adjust the calories accordingly, if you’re counting.

Step 1
Preheat the oven to 200°C and line a baking tray with non-stick baking paper. Add the fish fingers and cook according to the packet instructions (this is usually around 15 minutes). Remove from the oven and slice each fish finger into 3.
Step 2
Line another baking tray with non-stick baking paper and spread out the tortilla chips. Cover with the grated Cheddar cheese and place into the oven for 5 minutes until the cheese has melted. Set to one side.
Step 3
Add the red cabbage, lettuce, carrot and red onion to a mixing bowl. In a small bowl, combine the mayonnaise, cider vinegar, sweetener and sriracha sauce. Mix until smooth, then pour over the vegetables and toss to coat.
Step 4
Now you are ready to assemble. Fold the tortilla wrap into a cone shape and add a layer of the cheese nachos down one side of the wrap. Spoon in a little of the sliced vegetables, add 2 of the sliced fish fingers and a little more of the sliced vegetables.
Step 5
Repeat with the remaining 3 tortilla wraps and serve.
