If you love cooking, but not the washing up afterwards, you can’t go wrong with a traybake recipe. So, what if we told you that you could cook your full English breakfast all in one oven dish? We’re talking sausages, bacon, eggs, mushrooms, tomatoes, and even the toast, all baked together!
This Breakfast Traybake recipe is going to make your life so much easier. It takes just over half an hour to cook, and it’s slimming friendly too, with just 266 calories in each portion. Whether you serve it on its own or add some beans on the side, there’s no better start to the day.
It’s really easy to make this recipe your own, so if you want to use a different type of sausage, skip the bacon or swap the vegetables, it’s up to you! Just remember to adjust the calories accordingly, if you’re counting. We think throwing in a handful of leftover boiled potatoes (at Step 1) works particularly well!
What diets is this Breakfast Traybake suitable for?
This Breakfast Traybake recipe is suitable for dairy-free diets. It can be enjoyed on a gluten-free diet, as long as you substitute the bread and sausages for suitable alternatives.
As always, please take extra care when cooking for people with allergies and be sure to use different utensils, cookware and preparation areas.
Do you need any special ingredients to make Breakfast Traybake?
Nope! This recipe is really easy and uses standard ingredients that you’ll be able to pick up as part of your usual weekly shop.

There are 266 calories per portion in this Breakfast Traybake, which means it falls into our Everyday Light category.
This Breakfast Traybake is perfect if you’re following a calorie controlled diet, and fits well with any one of the major diet plans such as Weight Watchers.
NHS guidelines suggest men should aim for 2,500 calories per day to maintain a healthy body weight, and women require around 2000 calories. Each person has different calorie requirements depending on their goal, so you may want to adjust your daily calorie intake according to your own personal goal.
Step 1
Preheat the oven to 180°C and spray a 28 x 20cm ovenproof dish with low-calorie cooking spray. Grease the dish thoroughly.
Step 2
Add the sausages to the greased dish, place in the preheated oven and bake for 10 minutes.
Step 3
Remove from the oven and add the bacon, mushrooms and tomatoes, spacing them evenly throughout the dish. Spray the tops of the mushrooms with low-calorie cooking spray and place back in the oven to bake for a further 10 minutes.
Step 4
Remove the dish from the oven and add the eggs, cracking them into the gaps between the other ingredients. The egg whites should run into the gaps and join all the ingredients together when baked.
Step 5
Add the four bread ‘soldiers’, standing them on their ends in the egg whites and place back in the oven for a further 10 minutes, until the egg whites have set and the toast ‘soldiers’ are lightly browned.
Step 6
Season to taste with freshly ground black pepper, cut into 4 portions and serve immediately.
What could I serve with this Breakfast Traybake?

How do you know when Breakfast Traybake is cooked?
You should cook this Breakfast Traybake until the eggs have set and the sausages are cooked all the way through. This will take around 30 minutes.
Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.
How long can you keep Breakfast Traybake in the fridge?
We would recommend eating this recipe immediately after serving it. It’ll taste best fresh out of the oven and it won’t keep well in the fridge. Luckily it’s quick and easy to make from scratch!
Can I freeze Breakfast Traybake?
We wouldn’t recommend freezing this recipe.

Hi
Would this work in a microwave? I realise it wouldn’t brown the sausages or bacon but I don’t have a kitchen at the moment and am cooking everything in a microwave

Hi Hilary, our Breakfast Traybake is best cooked in the oven. We haven’t tested it in a microwave so don’t have cooking times to give you, but feel it would probably be unappetising unless you have a combination microwave with a browning option. Hope this helps and you now have a lovely new kitchen!
