As soon as we spot Hunter’s Chicken on a menu, we know what we’re ordering! It’s got it all – juicy chicken, wrapped in salty bacon, with heaps of BBQ sauce, all smothered in melted cheese. Now imagine if you could make it in your own kitchen, for a fraction of the calories!

That’s exactly what you get with our Slow Cooker Hunter’s Chicken recipe. Best of all, because it’s made in your slow cooker, it’s minimal effort too. Leave it to simmer low and slow, then you’ll only need to blitz the sauce and add the cheese when you walk through the door at the end of the day.

Go full pub grub style and add a side of Cheesy Garlic Bread, or keep it simple with some Creamy Mashed Potatoes to soak up every last bit of that mouthwatering sauce.

How many calories are in this Slow Cooker Hunter’s Chicken?

This Slow Cooker Hunter’s Chicken is perfect if you’re following a calorie controlled diet and fits well with any one of the major diet plans such as Weight Watchers.

Step 1

Take each chicken breast, wrap a bacon medallion around the middle and secure it with a cocktail stick.

Set the chicken aside, then add all of the remaining ingredients into the slow cooker and stir well.

Place the chicken on top and replace the lid. Cook on high for 2.5-3 hours (or low if you’re leaving it on all day).

Step 4

When the time is up check that the chicken is cooked. Remove it from the slow cooker and set aside.

Step 5

Blitz the sauce with a stick blender until smooth.

Step 6

Place the cooked chicken in an ovenproof dish and remove the cocktail sticks.

Step 7

Pour the sauce over the chicken breasts and top with cheese. Divide the cheese equally between all four chicken breasts.

Step 8

Place under a hot grill until the cheese is melted and a nice golden colour.

How do you know when this Slow Cooker Hunter’s Chicken is cooked?

The chicken should be cooked until any juices run clear and the meat is firm and white – this will take 3 hours in a slow cooker on a medium/high setting and 6 hours in a slow cooker on low.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

How long can you keep Slow Cooker Hunter’s Chicken in the fridge?

Once you’ve put it out, ideally you should eat it within 4 hours.

If you allow any left overs to cool, make sure to refrigerate them straight away, in a container with a lid.  You can keep leftovers of Slow Cooker Hunter’s Chicken in the fridge for approximately 2 or 3 days.

Can I freeze Slow Cooker Hunter’s Chicken?

Yes you can! This recipe can be frozen, but please remember to do the following;

  • Freeze it as soon as it is cold enough.
  • Use a container or bag that is suitable for freezing.

Don’t forget to add a label with what it is, and on what date you put it in the freezer! Unless you fancy mystery food for dinner haha.

How do I reheat Slow Cooker Hunter’s Chicken?

From chilled: Place in a microwavable container with a loosely fitting lid and heat for 4-7 minutes until piping hot.

From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes then stir. Cook for a further 5-7 minutes until piping hot.

Ingredients

  • 4 chicken breasts, approx. 150g each
  • 4 bacon medallions
  • 80 g reduced-fat Cheddar, grated
  • ½ onion, diced
  • 2 cloves garlic, crushed
  • 400 g tin chopped tomatoes
  • 1 tbsp tomato puree
  • ½ lemon, juiced
  • 1 tbsp BBQ seasoning
  • ¼ tsp smoked paprika, you can use chilli powder or normal paprika if you don't have this
  • 1 tbsp balsamic vinegar
  • 2 tbsp Worcestershire sauce or Henderson’s relish
  • 2 tbsp white wine vinegar
  • 1 tbsp hot sauce
  • 1 tsp mustard powder
  • 1 tsp granulated sweetener

Instructions

Hi, if im freezing this do i cook it all then freeze or freeze uncooked chicken in the sauce? Im thinking cook the chicken in the sauce then freeze before adding the cheese?

Fab recipe, the only thing i have changed is to cook the chicken and bacon separately (so you can get crispy bacon). Then stack onto the oven cooked chicken, then the sauce with your cheese allocation on top then back in the oven to melt.

To be honest i cant tell the difference from a pre-made dish apart from being much better and more washing up!

This looks fab and I can’t wait to try more SW friendly slow cooker recipes especially towards and across Winter. However, could I ask / suggest more info re Sukrin is given in terms of the right flavour to buy. I’ve checked Amazon (UK / .co.uk. version) and it doesn’t have ‘Sukrin 1’ it appears to go in flavour (I.e. Peanut, almond or coconut) alternatively a ‘gold’ and special baking versions. I really want to make sure I get the recipe and therefore flavour right! Thank you! 🙂
