Caramelised Onion Quiche

It’s only right that we kick off this list with one of our most popular recipes ever! If you missed it, this Caramelised Onion Quiche caused quite the stir over in our Facebook group from the moment we pressed publish. 

With just a few simple ingredients, you can see what all the fuss is about. The key is to cook your thinly-sliced red onions nice and slowly to release their natural sweetness. When they start to brown, they’ll take on a lovely caramelised flavour that complements the sharp yet creamy mature cheese filling. 

When you’re tucking into a slice that tastes this amazing for just 164 calories, we promise you won’t have a thought to spare for the absence of pastry.

The best of two easy-peasy dishes, this tuna-pasta-bake-meets-crustless-quiche creation is so much lighter than you might think. The pasta gives the creamy filling real substance, so every bite is hearty, as well as delicious.

Ploughman’s Quiche

If you like your quiche fully loaded with fillings, look no further. Inspired by one of Britain’s favourite cold lunches, we’ve baked all of the tastiest bits into this Ploughman’s Quiche. We’re talking ham, cheese, and even sandwich pickle, all mixed into a luxuriously creamy egg filling. 

With all those flavours working together, pastry will be the last thing on your mind! Skipping the crust means that this crowd-pleasing recipe works out at just 195 calories per serving. Dish it up for dinner by serving it hot with a side of Homemade Oven Chips, or keep it for lunch later in the week to enjoy cold with a crisp Greek Salad

Crustless Quiche Lorraine

Everyone loves a quiche Lorraine. Traditionally made with buttery pastry, the indulgent filling usually calls for double cream, bacon and Swiss cheese – which explains why a slice can be fairly high in calories!

While our Crustless Quiche Lorraine is far from traditional, we reckon we’ve done a good job of recreating the moreish flavours, all while cutting down the calories to make it far more slimming friendly. 

Along with saying goodbye to the pastry, we’ve swapped the cream for plain quark. Mixed in with the eggs, cheese, bacon and onions, it gives every slice a rich yet light bite to it. This is one of our favourite recipes to package up and take on-the-go instead of a sandwich!

Cheeseburger Quiche

It’s no secret that we love a cheeseburger, and we’ll find any excuse to combine the cheesy, delicious flavours with other dishes. From nachos to rice to this crispy baked wrap, we can’t get enough!

It’s no wonder then, that we found a way to give crustless quiche a fast food makeover. Our Cheeseburger Quiche is made up of a juicy, burger base, layered with a quick tomato sauce and a cheesy egg topping. 

Despite all those layers, it slices just like a regular quiche, and it comes in at only 285 calories per portion. If you like gherkins, add a couple on the side!

Chicken and Asparagus Quiche

It takes less than 40 minutes to whip up this Chicken and Asparagus Quiche. Packed with protein and low in carbs, it’s a slimming-friendly dream. Golden brown and gloriously cheesy, the addition of chicken and asparagus is perfect for spring and summer, making this a lovely light option for an outdoor lunch. 

It couldn’t be easier to batch-cook this crustless quiche, cool it and freeze it for a later date. We like to freeze it in individual portions, so you can quickly defrost and reheat it for a no-fuss meal on busier days.

When you want to help a little bit of cheese go a long way, it’s important to grate it really finely. We can’t live without a microplane grater in the kitchen – it’ll make it seem like you’re using much more cheese than you really are!

We might be biased, but we think this Chicken, Bacon and Leek Crustless Quiche is far more flavourful than a shop-bought version. Just like the other recipes on this list, we’ve worked some Pinch of Nom magic to make sure that every delicious serving is only 174 calories. 

Loaded with juicy diced chicken, lean smoked bacon and sweet, soft leeks, the filling was influenced by our ever-popular Chicken Bacon and Leek Cottage Pie. Our top tip for this one is to make sure you don’t skip the step of blending your cottage cheese – it’s the key to a silky smooth quiche. 

You’ll want to save a spot in your lunchbox for this one: the leftovers never last long in our house!

Creamy Garlic Mushroom Quiche

If you think this Creamy Garlic Mushroom Quiche looks good, just wait until you smell it baking in the oven. It’s a veggie-friendly recipe that ticks all the boxes: bags of flavour, easy to make, and on the table in under an hour. 

You’ll want to make sure you don’t rush when you’re cooking the mushrooms – it’s important to let all the moisture evaporate so there isn’t too much liquid in your creamy filling. If you don’t have any light single cream alternative, you can use ordinary single cream (just be sure to work out the extra calories, if you’re counting).
