Nothing beats breakfast in bed on Mother’s Day

We can’t think of a better breakfast to wake up to than our deliciously savoury Marmite Mushrooms on Toast. Super simple, and ready in less than 15 minutes, this dish is the perfect way to start the day. Serve it up alongside some fresh fruit and a cup of tea or coffee in their favourite mug!

This Eggs Florentine will set the scene for a really special day (and nobody needs to know it’s simple to make AND slimming friendly too). Instead of a high-calorie Hollandaise sauce, we’ve made a creamy cheese sauce that’s much lighter and just as tasty. 

For only 327 calories per serving, this breakfast dish looks and tastes so much more indulgent.

For a spicier upgrade, try our Mexican-inspired Avocado Salsa Eggs Florentine with a cuppa. This time the eggs are covered with a creamy chipotle cheese sauce, on a bed of zingy, chilli-infused smashed avocado

When they’re ready they’ll be all golden brown on the top with a truly irresistible chocolate centre. The only tricky part is not digging into these yourself – best to make an extra serving too, just in case…

Have a lovely Mother’s Day picnic for lunch

If the special someone you’re cooking for is trying to watch what they’re eating, you might want to keep lunch nice and light. Fancy an indoor picnic? Rain or shine, spread a blanket over the floor and stuff a basket with some of your favourite finger foods for a memorable lunch to celebrate Mother’s Day.

You don’t always need sunshine to brighten someone’s day – a tasty, healthy lunch can work wonders too! Lay out some crispy Vegan Sausage Rolls with a dollop of ketchup, or make some crunchy, fresh crudites to dip into our delicious Hummus Style Dip.

These slimming-friendly Cheese Palmiers make for a perfect savoury snack, or addition to your picnic party! With just 3 ingredients (smoky paprika, tangy Parmesan and easy ready-rolled pastry) you can create these deliciously crispy biscuit-like bites in almost no time at all.

A plate of these Cheesy Courgette Pancakes is always a good idea for brunch or lunch, especially with a side of crispy bacon and a few grilled tomatoes. 

Something a little bit different, they’re a nice change from sandwiches, salad or soup, and they won’t leave you feeling too full if you’re planning a big Mothering Sunday dinner later on.

You can’t have a lunchtime picnic without some quiche on your plate! Treat that special person to a slice of this Ploughman’s Quiche and you’ll definitely put a smile on their face. Delicious hot or cold, it even has tangy pickle mixed into the creamy, cheesy filling.

Make an extra-special Mother’s Day dinner

For a traditional Mother’s Day celebration dinner, why not rustle up a full three course meal at home? As well as being every bit as delicious as heading out for dinner, cooking our homemade dishes will save calories and be kinder to your pocket too. 

Start with a simple soup and a warm wholemeal roll for dipping. This Salmon, Leek and Potato Soup is a family favourite, or make the most of fresh spring flavours with Carrot, Orange and Thyme Soup.

For the main course, you can’t beat a classic roast dinner as part of your family feast. This tender Roast Beef and Gravy will go down a treat, and although it looks impressive, it’s not too tricky to make! 

Serve it with lots of fresh veggies and all the trimmings, including these Yorkshire Puddings! Don’t forget to let the beef rest while you all tuck into your starter.

There’s always room for a pudding that says ‘I love you’

No matter the occasion, these Biscoff Lava Cakes always look and taste really special, for a fraction of the calories you’d expect. That dreamy, oozy Biscoff centre is every bit as heavenly as it seems, and you can have it ready to enjoy in a matter of minutes.

You can even pop your ramekins in the microwave if you’d rather have these puddings ready in a flash.

Pick a pud that’s every bit as sweet as the person you’re treating! These Pastry Hearts are adorable heart-shaped flaky bites that are super simple to make. Using just 3 ingredients, you can have a batch of them ready in half an hour. They’re tasty whether you serve them hot or cold, but there’s something special about handing them out when they’re still warm from the oven…
