On a trip to Texas we tried the creamiest, most delicious Banana Cream Pudding, but it wasn’t exactly slimming friendly! Here at Pinch of Nom you know we love a challenge, so we set about creating an indulgent banana custard dessert that you can enjoy even on slimming plans like Weight Watchers.
We’ve made this with fresh custard, that’s actually so much easier to make than you might think and with really simple ingredients. There’s a knack to getting smooth custard, and it’s all in the whisking!
When you’re whisking the hot milk into the eggs, you should be extra careful to do it slowly and carefully: if you pour it in too fast you could end up with scrambled egg! And be sure to slowly bring the temperature of the custard up too, we’ve included more detailed in the recipe steps for foolproof custard in a pinch.

Firstly, make your custard.

Heat the milk in a saucepan until it is hot but not boiling.

In a mixing bowl, whisk together the egg yolks, cornflour, sweetener or sugar and vanilla essence.
Step 4
When the milk is hot, whisk it into the egg mixture a little at a time. Be careful to add it slowly. If you pour it in too fast you will scramble the eggs!
Step 5
Pour the custard mix back into the pan, and place on a low heat. Keep whisking until it thickens and bubbles begin to break the surface. Don’t be tempted to rush this. Increasing the heat will curdle the sauce and you will end up with a scrambled eggy mess! Allow the bubbles to break the surface for 30 seconds while you continue to whisk, then take off the heat.
Step 6
Scrape out of the pan into a bowl cover with cling film and allow to cool. When cold enough, pop it into the fridge for half an hour to chill.
Step 7
When cold, finely chop or lightly mash the bananas reserving a few slices for decoration and stir them into the cold custard.
Step 8
Whip the cream until thick and fold into the banana custard mix.
Step 9
Spoon into 4 individual glass dishes, top with the crumbled flake and reserved banana slices. Enjoy!

How do you know when Banana Cream Pudding is cooked?
You should simmer the custard for this Banana Cream Pudding until the bubbles break the surface for 30 seconds while being whisked. This only takes a few minutes, so take your time with this step to avoid any curdling!
Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.
