If you love cooking, but not the washing up afterwards, you can’t go wrong with a traybake recipe. So, what if we told you that you could cook your full English breakfast all in one oven dish? We’re talking sausages, bacon, eggs, mushrooms, tomatoes, and even the toast, all baked together!

This Breakfast Traybake recipe is going to make your life so much easier. It takes just over half an hour to cook, and it’s slimming friendly too, with just 266 calories in each portion. Whether you serve it on its own or add some beans on the side, there’s no better start to the day. 

It’s really easy to make this recipe your own, so if you want to use a different type of sausage, skip the bacon or swap the vegetables, it’s up to you! Just remember to adjust the calories accordingly, if you’re counting. We think throwing in a handful of leftover boiled potatoes (at Step 1) works particularly well!

Preheat the oven to 180°C and spray a 28 x 20cm ovenproof dish with low-calorie cooking spray. Grease the dish thoroughly.

Add the sausages to the greased dish, place in the preheated oven and bake for 10 minutes.

Remove from the oven and add the bacon, mushrooms and tomatoes, spacing them evenly throughout the dish. Spray the tops of the mushrooms with low-calorie cooking spray and place back in the oven to bake for a further 10 minutes.

Remove the dish from the oven and add the eggs, cracking them into the gaps between the other ingredients. The egg whites should run into the gaps and join all the ingredients together when baked.

Add the four bread ‘soldiers’, standing them on their ends in the egg whites and place back in the oven for a further 10 minutes, until the egg whites have set and the toast ‘soldiers’ are lightly browned.

Ingredients

  • 4 reduced-fat pork sausages
  • 4 eggs
  • 4 bacon medallions
  • 4 medium white mushrooms
  • 4 cherry tomatoes, halved
  • 1 medium slice of wholemeal bread, cut widthways into 4 'soldiers'
  • freshly ground black pepper, to taste
  • low-calorie cooking spray

Tip: We used reduced-fat pork sausages, but you can use any reduced-fat sausages of your choice and adjust the calories accordingly.
Tip: If you have any leftover boiled potatoes, you could cut them into small chunks, add to your traybake with the sausages in step 1 and adjust the calories accordingly.

Hi
Would this work in a microwave? I realise it wouldn’t brown the sausages or bacon but I don’t have a kitchen at the moment and am cooking everything in a microwave

    Hi Hilary, our Breakfast Traybake is best cooked in the oven. We haven’t tested it in a microwave so don’t have cooking times to give you, but feel it would probably be unappetising unless you have a combination microwave with a browning option. Hope this helps and you now have a lovely new kitchen!

    Hey Nina, there are lots of reduced fat sausages available in supermarkets including Good Little Company, Heck or a supermarket own brand, hope that helps!
