Cheese and Onion Mash
We didn't think it would be possible to improve on a bowl of classic mashed potatoes, but this Cheese and Onion Mash is a genuine pleasure! We've added caramelised onions, stirred through some reduced-fat cheese and lightly grilled the top to take this dish to the next level. Serve it with our Honey and Mustard Pork (page 179), or our Paprika Chicken (page 132), for a deliciously indulgent midweek meal.

If you don't want to bother grilling the mashed potato, simply stir all the cheese through at step 4 and serve. Pick a good - quality potato for this. Yukon gold are our favourite as they have a creamy, buttery texture, but Desiree and Maris Piper are a great choice too.
