Cool within 2 hours, then divide the recipe into portions and freeze immediately.

Swap this

The recipe is so versatile. If you're not an aubergine fan, use courgette instead. If you don't like feta, add extra Cheddar or another cheese of your choice.

Better-quality tinned tomatoes will rally make the difference in this dish. If the ones you are using are a little watery, add a tablespoon of tomato puree.

Easy peasy recipe and super filling
This is a great recipe, I added peppers and used a low fat salad cheese which is a cheaper feta. Easy to cook the oven does it for you so for a novice cook easy. Aubergine cooked to perfection. Love pinch of nom
