Cheesy Fajita Orzotto - Pinch of Nom Slimming Recipes

For the full list of ingredients and comprehensive instructions, please see the recipe card at the end of this post. Before you scroll, there’s important stuff to know in the blurb!

This recipe came about when we were thinking about making a spicy pasta bake that was packed full of fajita flavours. Experimenting with orzo instead of larger pasta shapes helped to transform this dish from a pasta bake to a risotto-like bowl of creamy, indulgent deliciousness!

We’ve used turkey mince in our Cheesy Fajita Orzotto, but it would also work really well with pork mince instead if you’d prefer. Love your food with a fiery, spicy kick? Add some chilli flakes alongside the other herbs and spices to liven things up!

We think that this Cheesy Fajita Orzotto works really well served with lettuce wraps – simply separate a couple of little gem lettuces into individual leaves, rinse them and then fill them up with your creamy orzo!

What diets is this Cheesy Fajita Orzotto suitable for?

This recipe can be made suitable for vegetarian diets as long as you use vegetarian alternatives for the following ingredients:

  • Chicken stock cube
  • Turkey mince

Please make sure to double or triple check all of your ingredients if you’re cooking for people with allergies.

Do you need any special ingredients to make this Cheesy Fajita Orzotto?

If you haven’t heard of orzo before, it’s basically a type of pasta that looks a bit like rice! You should be able to pick it up in your local supermarket in the pasta aisle!

Fajita spice
Run out of fajita spice mix?!? Make ure own using the Mexican spice mix from PON, really does make all the difference to the flavour of this dish 😋
NEW TIP
Super simple one pot dinner.
Had no fajita seasoning so used some cajun but added only one tablespoon instead of two, you could add more depending on how spicy you like it.
NEW TIP
Make it your own
This is one we love, to mix it up from time to time I have added mushrooms as it bulks it up.
Easy to make in a pressure cooker
To use a pressure cooker. Soften the veg and brown the mince in the open pressure cooker using the brown/ saute function. Add the spices, stock and tomato puree and place the orzo on top. Do NOT stir! Pressure cook for about 5mins on risotto setting.
I swapped out chicken for a vegan version, and used a plant based soft cheese. Didn’t impact the cooking or the outcome. Very easy recipe to adapt.
Really simple recipe to follow with great results it's lovel
Don't panic if you don't have fajita mix it's easy to make, I did. It's a really tasty meal
I added some chilli flakes for a little extra spice

Fab meal
Swapped turkey mince for chicken breast
Extremely easy to make, with few ingredients.Tasted beautiful
I used a large frying pan and covered with foil, making sure to stir it often. Could easily made without the mince to make it a meat free dish.
Tasty made vegetarian version due to ingredients at hand
Follow recipes then found I had no mince as I’m on holiday in turkey so made it with all ingredients and chickpeas instead of mince Came out perfect and so tasty. Even on holiday I can use your recipes thank you
Delicious and speedy one-pot meal!
Really easy and tasty one-pot meal! I used Meatless Farms frozen mince to make it veggie (and helps to reach a whopping 45g of protein per serving!). Delicious served with a dollop of sour cream and some spinach, plum tomatoes and spring onion.
If you feel like you cook a lot of the same pasta like Fusilli, Shells, Tagliatelle then using Orzo brings a new dynamic to a pasta dish. What I personally like about Orzo is they are usually done as a one-pot recipe. Orzotto is something you need.

Had anyone made this with rice instead of orzo? It’s a firm favourite in our house and I’m wanting to make it for some friends who are gluten free so thinking I could use rice instead? Anyone got any ideas how to make it work? Thanks for helping….

Hey Becki, we haven’t tested this recipe using rice and you might need to tweak the recipe, cooking times and amount of liquid you use to get good results. I’ve had a look online and you can get gluten free orzo from some shops and some websites suggest using arborio rice instead but as we have not tested the recipe this way, we can’t guarantee how successful it will be. Let us know how it goes if you decide to try it. Hope that helps!
