With a few simple swaps, a pie is a wonderful way to create a treat meal on a Friday night without going crazy on the calories. Using filo pastry as a topper instead of dense, calorie-laden shortcrust pastry, you can recreate the flavour and texture of a classic pie. The low-fat cream cheese blends with the other ingredients to create a gorgeous, creamy sauce, perfect for this dish. Serve with a green salad or some seasonal steamed vegetables.

Chicken, Ham and Leek Pie - Tasty, tasty, very, very tasty!
Made a few tweaks to use the ingredients I had in. I used a thinly sliced carrot instead of a leek and I only had a puff pastry sheet in my freezer for the topping. The whole family loved it!! Everything just melted in your mouth. Yummy 😋
NEW TIP
Put leftovers to use - less waste, save money
I wasn’t feeling great so needed a quick and easy homemade meal. I used leftover roast chicken, leftover mash, a pack of ham off cuts, frozen leeks and frozen onions. I used a teaspoon of dried thyme as I didn’t have fresh. PON improvisation!
Works well with fish
Swapping the chicken and ham for fish works really well - I used a frozen fish pie mix
