Creamy Garlic and Parmesan Chicken
If you're a cheese lover, then this is the dish for you! The double whammy of cheese in this recipe means that it's hard to believe that it's slimming friendly, but it's surprisingly low on calories. We've used strong-flavoured Parmesan as a little goes a long way and it helps to keep the calories down. Serve with our Stir-fried Savoy Cabbage (page 221) for a super-satisfying dinner that tastes as good as it looks.

If you do not have a pan suitable for the oven and hob, cook the chicken and sauce in a large frying pan and transfer to an ovenproof dish before sprinkling with breadcrumbs and putting in the oven.
