If you're a cheese lover, then this is the dish for you! The double whammy of cheese in this recipe means that it's hard to believe that it's slimming friendly, but it's surprisingly low on calories. We've used strong-flavoured Parmesan as a little goes a long way and it helps to keep the calories down. Serve with our Stir-fried Savoy Cabbage (page 221) for a super-satisfying dinner that tastes as good as it looks.

If you do not have a pan suitable for the oven and hob, cook the chicken and sauce in a large frying pan and transfer to an ovenproof dish before sprinkling with breadcrumbs and putting in the oven.

Fabulous recipe and so easy to make!
I reduced the stock in the recipe to 350ml
This recipe freezes and reheats really well. I froze it in a foil tray without the crumb.
Use a fine grater, you still get all the flavour
Didn't have an oven dish so I used a deep oven tray. All cooked on top of the cooker but did have to simmer a bit longer.
The topping stayed ever so crispy and lifted out perfectly.
I added corn to the mix, mushroom would also go nicely.
Delicious! We loved this
Perfect midweek dinner. Served it with the stir-fried cabbage, delicious 😋
