One of our most popular recipes EVER in our Facebook group since it was published in our first book, we are delighted to share our delicious Creamy Garlic Chicken. This recipe is so rich and full of flavour, it’s hard to believe it’s been nowhere near a jug of cream!

We’ve packed some mushrooms in for extra variety and plenty of garlic so it even smells fabulous while it’s bubbling away! Using low fat cream cheese is a fantastic way to make this tasty meal feel super indulgent, without the high calories of a traditional, cream-based dish. Using clever swaps like this means you can enjoy a wonderfully decadent dinner without compromising on your diet.

Serve it with rice, pasta, chips, roasties: the possibilities are endless and you’ll fall in love with this slimming friendly dinner in no time!

What diets is this Creamy Garlic Chicken suitable for?

Everything should be easily available in the supermarket. Make sure you use the white wine vinegar and Worcestershire sauce to deglaze the pan – those little browned bits are so flavourful and no need to waste them!

Amazing Flavours

Creamy garlic chicken with tagliatelle and carrots 🥰
Reduce the stock element down a little longer to make the sauce thick and creamy. Serve on top of tagliatelle for a real winner!

Very versatile dish and always tastes amazing. Delicious!
We always love this dish. Today I used chicken fillets and wrapped them in bacon. In the sauce I added a little baby spinach from the garden and peppers instead of mushrooms. Always tastes special. So versatile and easy to do!

I can’t believe this is a healthy dish, the sauce was so rich and creamy. I used turkey steaks instead of chicken breast as they were so much cheaper but they didn’t disappoint. Will definitely be making this again.

I just make the sauce on its own then add to whatever meat I fancy just portion the sauce and freeze and get out when needed. Also make using chestnut mushrooms for a slightly different taste both versions are yummy!

How many calories are in this Creamy Garlic Chicken?

Step 1

Season the chicken with a little sea salt and freshly ground black pepper, then set aside

Step 2

Spray a large frying pan with low calorie cooking spray and place on a medium heat

Step 3

Add the chicken to the pan and quickly seal on all sides, then remove the meat from the pan, and set aside

Step 4

Return the pan to the medium heat.  Add the vinegar to the Worcestershire sauce and deglaze the pan with the mixture, scraping and stirring the browned bits from the pan – use some of the stock if you need to. When most of the liquid has evaporated spray the pan with some low calorie cooking spray. Add the onion, mushrooms and garlic and sauté for 5 minutes until they start to brown, then add the Dijon mustard and cook for a minute or two, stirring constantly

Step 5

Add the stock to the pan and simmer until the liquid has reduced by half

Step 6

Reduce the heat to low and stir in the cream cheese, making sure there are no lumps of cheese remaining

Step 7

Return the chicken to the pan, stir well and simmer for 5-10 minutes until the chicken is cooked. If the sauce looks a little thick you can add some more water until it reaches the consistency you prefer

Step 8

Sprinkle with the chopped chives and serve

Ingredients

  • 400 g chicken breast or thigh, (skin and visible fat removed), thinly sliced
  • 1 onion, thinly sliced
  • 250 g button mushrooms, thinly sliced
  • 3 garlic cloves, thinly sliced
  • 1 tsp white wine vinegar
  • 1 tbsp Worcestershire sauce
  • 400 ml meat stock (1 beef stock cube dissolved in 400ml boiling water and mixed with 1 chicken stock pot)
  • 1 tsp Dijon mustard
  • 175 g reduced-fat cream cheese
  • sea salt and freshly ground black pepper
  • low-calorie cooking spray

To serve

  • fresh chives, chopped
  • sweet smoked paprika (optional)

    Hey Jen, yes you could add carrots and broccoli. You would need to par cook them before adding them as they will need a little longer to cook than the rest of the recipe. Hope that helps!

I don’t like dijon mustard. Would this be ok without the mustard? or anything else you could use to replace it with?

    Hi Claire, you could leave out the Dijon mustard but it will change the flavour of the dish. There’s only 1 tsp of Dijon mustard in the recipe so it doesn’t stand out as a predominant flavour, but blends with the other ingredients to make a delicious mild and creamy sauce. If you like wholegrain mustard you could try using that instead.Hope that helps.

Tried this for the first time tonight. Used green beans instead of mushrooms as the hubby isn’t a mushroom fan, and it went down a treat. Had a warm bread roll on the side to soak up the last of the sauce.
We’re thinking of adding extra veggies in next time we make it (like diced peppers) to give it that extra little veggie kick.
