This dessert really does taste as good as it looks! Tangy and sweet, with a crunchy crust, this light pie is delicious on a summer's day. We've used reduced-fat ingredients to keep the calories low while making sure it is still bursting with fresh, zingy lime flavours. Serve with a squirt of low-fat aerosol cream, if you like, bearing in mind that this will increase the calories.

Make sure to give the pie it's full chilling time - don't be tempted to cut it earlier or you risk it not being set!

Don’t panic if your mixture is very liquid like to begin!
If, like me, you worry you don’t have the right consistency when pouring the mixture onto the base don’t worry. Mine was pretty much like liquid and it set perfectly fine and was the right consistency in the end! We left it to set overnight.
Nom nom nom!
These were delicious. I made in 4 ramekins and put in the freezer for an hour as I hadn't prepared the day before! It worked well and they came out perfectly for a dinner party.
Why not use a spring cake tin
I used two small 6inch cake tins to make these super cute pies - half of one is a portion - yum yum yum 😋
Chocolately base is extra lush!
I added a sachet of low cal coco powder to the base to give it a chocolate flavour. Leave out of the fridge for about 15 mins before slicing as it can be quite tough to begin.
