Gooseberry Fool
Sharp and sweet at the same time, gooseberries are perfect for a good, creamy fool. And 'fool' is a fantastic name for these as they will fool you into thinking they are heavy with cream. Instead, this recipe uses quark, an unflavoured soft cheese which gives a rich creaminess to dishes while being low in fat.
