We’ve reduced the calories by making a home-made sauce that’s packed with a perfect blend of veggies and spices. The chicken breasts we use are coated in panko breadcrumbs before they’re baked in the oven, so you’ll get to enjoy that irresistible katsu crunch. 

You’ll want to plate this one up with some fried rice or chips and a bit of coleslaw. It’s the perfect Friday night dinner!

This Katsu Curry Burgers recipe can be made suitable for gluten free diets as long as you swap out the following ingredients for gluten free versions;

  • Bread roll

How many calories are in Katsu Curry Burgers?

Preheat the oven to 200°C and line a baking tray with non-stick baking paper.

For the katsu sauce

Step 2

Spray a saucepan with low calorie cooking spray and set on a medium heat. Gently fry the onions and garlic for a few minutes.

Add the carrot, potato, garlic granules, onion granules, stock, , garam masala, curry powder, and soy sauce to the pan and bring to the boil. Then reduce the heat to a simmer and put a lid on the pan. It will need to simmer for around 20-30 minutes, make sure to stir occasionally and add more water if it reduces too much.

For the burgers

While the sauce is simmering, add the panko breadcrumbs to a bowl and the beaten egg to another.

Lay the chicken breasts out on a chopping board and using a sharp knife slice horizontally to create two smaller fillets.

Dip each chicken breast fillet into the egg and then the panko breadcrumbs and lay them out on the baking tray.

Step 7

Spray the top of the chicken with low calorie cooking spray and place the tray into the oven. Cook for 30 minutes turning halfway through until the chicken is cooked through and no pinkness remains.

When the vegetables are cooked through, add the sweetener to the pan and use a hand blender to blitz until smooth.

Combine the salad ingredients together in a bowl.

Spread a little of the katsu sauce on the bottom of the roll and top with a cooked chicken fillet. Add some more sauce on top of the chicken fillet and top with some salad. Place a bread roll half on top. Serve with your choice of accompaniment.

How do you know when Katsu Curry Burgers are cooked?

You should cook Katsu Curry Burgers until the chicken is cooked through and no pinkness remains. This will take around 30 minutes.

To keep your family safe, the advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes.

How long can you keep Katsu Curry Burgers in the fridge?

Once you’ve put them out, ideally you should eat the burgers within 4 hours.

If you have any leftover sauce, make sure you allow it to cool before you refrigerate it in a container with a lid. You can keep the sauce for approximately 3 days or so.

The rest of the recipe, including the chicken, is not suitable for refrigerating.

Can I freeze Katsu Curry Burgers?

Yes you can freeze the sauce from this recipe! The chicken cannot be frozen as it will go soggy. Please remember to do the following;

  • Freeze the sauce as soon as it is cold enough.
  • Use a container that is suitable for freezing.

Don’t forget to add a label with what it is, and on what date you put it in the freezer! 

How do I reheat Katsu Curry Burgers?

We would only recommend reheating the sauce from this recipe.

From chilled: Place the sauce in a microwave proof container with a loosely fitting lid and heat for 2 – 4 minutes or until piping hot.

From frozen: Allow to defrost thoroughly in the fridge, cover loosely and heat the sauce in the microwave for 2 – 4 minutes or until piping hot.

Ingredients

For the burgers

  • 3 medium skinless chicken breasts approx. 130g each
  • 1 medium egg beaten
  • 100 g panko breadcrumbs
  • 6 breadrolls sliced in half
  • low calorie cooking spray

For the katsu sauce

  • 1 medium carrot peeled and sliced
  • 1 small onion peeled and sliced
  • 1 small potato approx. 140g peeled and chopped
  • 2 garlic cloves peeled and crushed
  • 2 tsp white granulated sweetener
  • 2 tsp soy sauce
  • 2 tsp curry powder
  • 1 tsp garam masala
  • 1/2 tsp onion granules
  • 1/2 tsp garlic granules
  • 1 chicken stock cube made up with 300ml/ 1 cup boiling water

For the salad

  • 30 g carrot peeled and grated
  • 30 g cucumber grated
  • 30 g little gem lettuce thinly sliced
  • 3 radishes thinly sliced
  • 1/2 red chilli deseeded and finely sliced
