Lemon and Coriander Hummus
This hummus is fresh and zingy with lemon, making it the perfect dip for veggie sticks. We use butter beans to both reduce calories and give a creamier, less gritty texture than making it with chickpeas. This hummus goes well with salads, and the lemon flavour pairs well with grilled meats like chicken and fish, or our Seekh Kebab Roll (see page 53).
