One-Pot Mediterranean Chicken Rice
Our One-pot Mediterranean Chicken Orzo recipe caused a huge stir when we published it online, and this new version uses fluffy, savoury rice instead of orzo pasta! We've made this dish naturally gluten free, and it's a real people-pleaser dinner. We love making a big batch and freezing the leftovers for another day.
Hints & Tips

We used standard white rice, but some varieties take slightly different times to cook. If at the end of cooking time you find the rice isn't quite cooked, pop the lid back on the dish and pit it back into the oven for 5-10 minutes until it is ready. If you don't have a lidded dish suitable for both the hob and oven, cook the first part in a saucepan, up until you need to return the chicken to the pan, transfer to a deep roasting dish before covering with foil.
