We guarantee this will be a new family favourite! It's really easy to make and uses a lot of ingredients you will already have in your cupboards and is all cooked in one pot so there's less washing up, which is a win for us! It has a rich and creamy sauce with a lovely nutty flavour and is a really comforting and low-calorie alternative to ringing for a takeaway.

NEW TIP
Peanut butter chicken curry
Easy to make and very tasty. Finally found peanut butter powder at Holland and Barrett. Added water chestnuts in the final 15 minutes of cooking to give a bit of crunch.
I loved it, it was so creamy.
I forgot to put the vegetables in but it was still lovely, I could always add them at a later date. I did use thigh and chicken breast. Also I had garlic bread with it.
Peanut Butter Chicken Curry with Broccoli & Cauli rice
Mushrooms make a great alternative to courgettes, they keep their texture and soak up all the lovely flavours. Served with Broccoli and Cauliflower rice and added a Warburton's Naan to scoop up the sauce.
Cannot wait for round 2!
Added a little water to the ingredients to make it a little more ‘saucey’. Easy to add in extra veg. Love, love, love!

Added fresh coriander & fresh chillis for a bit of a kick 🌶️
Recipe Hint
I'd dice the chicken into fairly small pieces. It seemed to make it a lot more moist than if it was in large pieces.
A lovey mid week meal, easy to make in the slow cooker.
We used leftover shredded chicken from a roast and added this to the slow cooker at the same time as the spinach & courgette to warm it up and absorb the flavours.
Pinch of wow!
Used smooth peanut butter and a little extra coconut milk and it worked really well. Lovely creamy sauce and tender chicken pieces
This recipe was really nice and not overly nutty in taste.
I added a few flaked almonds to the top of my finished curry to make it look fancy. This curry would taste nice with a side salad and the PON onion bhajis. I will be putting my left over peanut butter curry Into the PON samosas for my lunch next week
Nice but mild
I didn’t find it very spicy so will double amount of siracha next time
Full of flavour
I added some extra sriracha sauce, as I thought it needed some more kick, but it might have gained more heat during cooking.
I changed the chicken to Quorn for a meat free delight
All of these recipes are so easily adapted to be meat-free using Quorn
Easy and delicious, you’ll never settle for a takeout again
Others in household are not keen on visible veg so I blitzed the sauce before adding the spinach. A masterpiece.
Comfort food as a hug...
To thicken your sauce, peave the lid off for part of the cooking process... I added coriander as a garnish with a slice of lime for those who like it extra zingy...
