Quickles (or quick pickles, if you're a party pooper) are great as a low-calorie snack, or to use in other recipes such as burgers or Sloppy Dogs (see page 65). We also love them served as part of our Ploughman's Platter (see page 95). Whereas regular pickles can take a week to ferment, these Quickles will be ready in a mere 40 minutes.
