NEW TIP
Go Giant!
I use giant couscous instead of normal, I find it keeps the texture better and makes this all kinds of awesome!
Giant!!
Switched giant couscous in place of normal (had run out) and actually prefer it, slightly longer cooking time but great texture.
Lovely lunch time recipe. Quick and easy!
I used some mozzarella cheese instead as it was left over and added some lettuce. It was very tasty.
Slight tweak!
I had no couscous or pomegranate in - so I used macaroni and grapes instead. I’ve used orzo in the past too. I love how versatile it is but also how tasty it is! A summer favourite in our house!
Lunch for work sorted for the week!
Didn’t have right coloured peppers so used red instead of orange. Made full recipe and will have for four days at work for lunch.
