On busy days, it’s so nice to be able to throw a few simple ingredients into a dish and let the oven work its magic. This Sausage Traybake is minimal in effort, but so rewarding when it comes to flavour.
There’s no need for multiple pans or lots of prep, just parboil the potatoes and carrots and then throw everything into a roasting dish. Who doesn’t love a recipe with less washing up afterwards?
Drawing on the classic combination of pork and apple, this recipe includes fresh wedges of apple, nestled in with onions, carrots and potatoes. Coated in a honey and mustard sauce, all the flavours mingle together as they roast, turning golden, caramelised and completely irresistible.
Although we’ve used reduced fat pork sausages there’s no reason these can’t be swapped for vegetarian sausages if you want to make this recipe meat-free. Just remember to keep an eye on the calories if you’re following a diet plan.

Preheat the oven to 200°C.
Step 2
Place the potatoes and carrots in a saucepan, cover with cold water and bring to the boil. Cook for 5 minutes, then drain well.
Step 3
Place the sausages, onion and apple in a large roasting tin. Add the potatoes and carrots.
Step 4
Spray well with low calorie cooking spray, season with a little salt and black pepper and toss around to coat the vegetables evenly.
Step 5
Place in the oven and cook for 20 minutes, shaking halfway through to ensure even cooking.
Step 6
In a small bowl, mix together the honey, mustard, garlic granules and apple juice. Pour over the sausages and vegetables and toss around to coat well.
Step 7
Add some thyme sprigs, return to the oven and cook for a further 20 minutes, until the sausages are cooked and the vegetables are browned. Serve!

How do you know when Sausage Traybake is cooked?
You should cook this Sausage Traybake until the sausages are cooked all the way through and the vegetables are soft and golden brown. This should take around 40 minutes.
Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.
