This North African dish is quite simply a tomato-based stew made with onions, garlic and peppers, with eggs poached in the mixture. It's a home comfort-style meal that's easy on the calories with a slight chilli heat. Serve it with some new potatoes and green vegetables, or just on its own as a light meal.

I used cayenne pepper cos I didn't have chilli powder.
Love this! Quick, easy and cheap tasty meal.
We have regis stone pans that take a little more time to cook off moisture in food due to no oil. Cook the tomato and spinach mixture slightly longer before adding the eggs. Or mop up with wholemeal toast which goes so well.
Rich and Indulgent
I used a combination of cherry tomatoes and a small tin of chopped tomatoes.
I’m not afraid to try new things and was looking for a dish with no potato, rice or pasta and this came up trumps. It’s kind of a tomato stew with eggs and lots of veggies. I served it with the PON ‘Kickin Cheesy Brocolli’ with suited it well.
Toast a ciabatta to dunk into the runny yolk
