This hearty casserole is packed full of flavour and is a great way to warm up when the weather starts getting colder. It’s packed full with loads of yummy vegetables, but that doesn’t mean that you can’t serve it alongside even more!

I made ours in the oven and cooked for 3 hours. This made a huge portion, we easily had enough for another family meal. I froze in portion sized containers for a quick and easy lunch.

Instead of the slow cooker I used the fan oven, 160c for around 90 mins in cast-iron casserole pot, then added the stockpot and butter beans for a further 20 minutes to warm through.

Ingredients

  • 600 grams chicken sausages
  • 2 onions diced
  • 2 peppers any colour - diced
  • 5 medium carrots peeled and sliced into thick chunks
  • 600 grams small potatoes peeled and cut into big chunks
  • 2 400g tins chopped tomatoes
  • 3 tbsp tomato puree
  • 250 ml chicken stock made up with 1 stock cube
  • 2 cloves garlic crushed
  • ½ tsp dried oregano
  • 1 tsp dried thyme
  • 1 handful fresh parsley chopped
  • 1 400g tin butter beans drained
  • 1 beef stock pot
  • 1 tbsp Worcestershire sauce
  • 1 bay leaf

    Hi Jane, you could brown the sausages to give them a little colour before putting them into your casserole dish but you should be fine following the slow cooker method and cooking in a casserole dish with a tight fitting lid, or in an oven tray with some foil tightly wrapped around the top. Cook for 2 – 3 hours at 170 – 180°C, checking every 30 minutes or so. Hope that helps!

Do you have to par boil the potatoes? Had mine on for 8h on low and the potatoes is still not cooked through properly. Hoping to up it to high will solve the problem.

    Hey Emma, no need to par boil the potatoes before adding to the slow cooker. The settings on slow cookers can vary between brands so it could just be that on your low setting the casserole needs longer to cook than we have specified. Hope that helps!

This sounds like a really silly question. I really want to slow cook this casserole as I’m making it tomorrow but the place I am staying it doesn’t have a slow cooker and I really would prefer to slow cook it. The oven that I have has a slow cooking feature. Would it work if I slow cooked it in the oven just as well as the slow cooker?

    Hi Christina, this recipe uses 1 chicken stock cube made up with 250ml water this is added in step 1. Then in step 4 you add the beef stock pot with the beans. Hope this helps!

    The vegetables will release some moisture as they cook, and you don’t get much evaporation during slow cooking. If you have followed the recipe, it should be fine.

Now, this might seem like a silly question, but here goes!

In the recipe above it says to make 250ml chicken made up with 1 stock cube. Does that mean to use a Knorr stock cube (other brands available) that normally would make 500ml but only add half the water, or cut the stock cube in half?

If this was a Facebook group type question I am sure there would be lots of people saying – DUH!!!, but I quite often see this type of ingredient instruction – not just on your wonderful site but others too.

I think it would be the former suggestion I made as slow cooking tends to increase the liquids naturally anyway!
