Our Potato Salad is a fantastic addition to any picnic or as part of a barbecue. We’ve used quark and fat free natural yoghurt in this recipe to cut down on the amount of calories and Points without compromising on the creamy taste.
You could even add some extra vegetables like some sweetcorn or peppers for extra crunch. Chopped up pickles such as gherkins or even chopped up boiled eggs would also taste amazing!
You can also enjoy this Potato Salad dish when served as a light lunch or as an accompaniment to a summer dinner.

How many calories are in this Potato Salad?

Step 1
Cook the potatoes in boiling salted water.
Step 2
Finely chop the spring onion and chives.
Step 3
In a large bowl, mix together the quark, yoghurt, chopped chives and spring onions (reserve some for garnishing).
Step 4
Season with some sea salt and freshly ground black pepper, then set aside in the fridge.
Step 5
When the potatoes are cooked, remove from the pan and allow to cool enough to handle – you can run them under cold water to speed this up a bit.
Step 6
Cut the potatoes in half or quarters, depending on size, then mix them in with the quark mixture.

How do you know when this Potato Salad is cooked?
You’ll need to cook the potatoes for around 25 minutes or until they are tender.

Hi Lesley, you could use some light cream cheese instead of the quark, of just leave it out and just use yogurt. Hope this helps.
