Tropical Fruit Fool
You’d be foolish to say no to pudding with this creamy fruit dessert on the menu! We’ve stayed as true as possible to the traditional English Fruit Fool recipe, with a few handy swaps to keep things light. The trick’s in using mangoes and pineapples at their ripest, so that those fruity puree swirls are bursting with yummy, tropical flavour!

Beat the light double cream alternative until it reaches the soft peak stage, which will give the fool a light airy texture, but be careful not to overbeat, otherwise it will be too stiff to fold in with the yoghurt
