These 2 Syn Apple Strudels are our Slimming World friendly version of the popular Austrian dessert, Apple Strudels. Unless you’ve been living under a rock recently, you’ll know there has been a bit of a wrap frenzy in the Slimming World community lately!

Traditionally Strudel is made using with a Strudel dough, using lots of flour and oil, and in some cases using filo pastry.

These ingredients aren’t the best option when following Slimming World, so we thought we’d try to make our own version using a Weight Watchers Wrap.

What do I need to make thess 2 Syn Apple Strudels?

Apart from the Slimming World store cupboard staples of eggs, a bit of sweetener and Frylight, you will also need a Weight Watchers Wrap, some mincemeat and a cooking apple.

As you will probably know, there are a few different wraps you can use as your HEB, but we’ve found that the Weight Watchers ones are the best for making things like Syn Free Cheese and Onion Pasties, Syn Free Sausage Rolls, and 1.5 Syn Apple Turnovers.

Whenever we need to replace oil in cooking we use Frylight. Perfect for everyday frying and cooking, it delivers exactly one calorie per spray, which makes it Syn free!

The Sunflower or Rapeseed flavours are ideal for these 2 Syn Apple Strudels recipe.

How many Syns in these 2 Syn Apple Strudels?

These Apple Strudels 2 Syns each, if you use the Weight Watchers Wrap as your Healthy Extra B option.

If not you will have to count an extra 5.5 Syns for the wrap.

Cooked 2 Syn Apple Strudels | Slimming World

Cooked fruit should be Synned when following the Slimming World plan, so the 60g of cooked apple in this recipe works out at 1 Syn.

We used a cooking apple, as you can have an extra 20g of fruit for the same number of Syns.

Finally, the mincemeat works out at half a Syn per teaspoon, which means the 2 teaspoons we used work out at 1 Syn.

As you will probably know last year Slimming World brought out some new recommendations regarding the syn value of granulated sweeteners.

This means that where there is 1 tbsp or more being used per serving they recommend you count 0.5 Syn per tbsp.

If using smaller amounts, like a pinch or teaspoon, there’s no need to worry about Syns at all.

The recipe for these 2 Syn Apple Strudels only uses 2 teaspoons of sweetener in the apple and a sprinkle on the top of the Strudel so there’s no need to add any Syns on for the sweetener itself.

How do I make these 2 Syn Apple Strudels?

Step 1

Peel, core and chop the apple, then place it in a microwavable bowl, and sprinkle with the cinnamon and sweetener.

Add 1 tbsp of water, cover with cling film and cooke on high for a couple of minutes or until it starts to soften, but still has a bit of a bite.

Step 2

Remove the apple and drain off any excess water and weigh out 60g of cooked apple. Mix in the mincemeat and set aside

Step 3

Take the wrap and fold it into 3 equal sections. Press firmly so you can see the marks when you unfold it.

Step 4

Open out the wrap and fold it in half. When you do this you should be able to see the marks you made earlier.

Step 5

Using a sharp knife make a cut from the line to the edge of the wrap. Measure a fingers width and make another cut at the same angle.

Step 6

Continue cutting, you should get around 7-9 strips, leaving the top and bottom of the wrap uncut.

Step 7

Brush the whole wrap with beaten egg, paying extra attention to the edges. Spoon the apple and mincemeat along the middle of the wrap.

Step 8

Fold the top and bottom of the wrap in, then starting at the end closest to you fold the bottom left strip up towards the top right hand corner of the wrap.

Step 9

Fold the bottom right strip over towards the top left corner of the wrap.

Step 10

Alternate the remaining strips until all the filling is enclosed.

Place on a baking try that has been sprayed with Frylight and bake at 200°C until golden brown.

  1. Hi I’m just about to make these apple strudels but I’m a bit unsure as to how much cinnamon to use as it does mention it in the recipe. Also, the recipe calls for a pinch of sweetener but when I’ve read how to cook them it says to use a couple of teaspoon of sweetener. Can you clarify please.

      The cinnamon is really down to personal taste, so a pinch if you just want a hint of flavour, but if you really like it, add more! Having said that, it’s only one apple, so don’t go too crazy! 🙂

      The pinch of sweetener mentioned in the recipe list is to sprinkle over the strudel before you cook it. The instructions in step 1 of the recipe explain that you should add cinnamon and a couple of teaspoons of sweetener to the apple when you cook that!

      Yes, as you’ll need to count the Syns for the wrap separately (5.5 Syns) because you’re not using it as your HEB. 🙂

      If you did want to freeze these strudels, we would suggest that you cook them first. Once cooled, you can freeze them. 🙂

      Yes, freeze as soon as they’re cold. Defrost thoroughly before reheating and make sure filling is hot throughout. 🙂
